Delicate Cuts, Maine Raw Bar and The Epitome Of Luxury Can Be Found At Diplomat Prime

Whether it’s from Delray, Boca or Fort Lauderdale, us South Floridians rarely want to venture more than 10 miles from our respective cities for a meal. (And who can blame us when the weather is nice enough for a casual stroll to anywhere, and a journey down Interstate 95 could be life threatening?) Worth the drive to Hollywood, however, is Diplomat Prime. Think delicate cuts of prime or wagyu steak; a raw bar with Maine lobster cocktail and a shellfish tower; and shareable sides, like truffle whipped potatoes and
roasted cauliflower. 

At the center of the luxury boutique steakhouse’s dining room is a wooden wine case with a sliding ladder used to retrieve top-shelf bottles. It’s reminiscent of an old-school library. Only at libraries there aren’t waiters who pull out your chair and fluff a napkin across your lap. And there usually isn’t steak. Outstanding steak. Perhaps the best steak you’ll taste all year. 

But before jumping into the main course, order a starter. The octopus arrives dressed in feta, edamame hummus, black olive and daikon radish, and was created by executive chef Nicolay Adinaguev to pay homage to his South American roots. “Our menu here at Prime is heavily influenced by Peruvian flavors and techniques,” he says. “It has everything from our crudo, which essentially is a tiradito, to our octopus dish, where we glaze the charred octopus [with] aji panca anticuchera sauce, and even our tater tots come with a side of warm huancaína sauce to dip them into.”

Adinaguev left Fort Lauderdale staple Steak 954 last June for the executive chef position at Prime, joining a wave of renovations totaling $100 million at The Diplomat Beach Resort Hollywood. Additional concepts include Point Royal, a coastal-American restaurant by TV star Geoffrey Zakarian, and Counter Point, a coffee/fresh juice and pastries/sandwich shop. 

As for a reservation at Prime, Adinaguev says to expect “an elevated steakhouse experience, with attention to detail, and great service in a gorgeous room with a diverse selection of food to match our awesome beverage program.”
