At Margaritaville Resort's New JWB Prime Steak And Steakfood, Find South Florida's Freshest Spear-Caught Fish And Juicy Steaks In The Same Place

Step into a world where blues as deep as the ocean cover the walls and grouper, caught just hours before, sits on your dinner plate. If this sounds like seafood heaven, then you’ve come to the right stop at Hollywood’s Margaritaville. Fresh might as well be included in the name JWB Prime Steak and Seafood, where not only is the seafood worth raving about, but so are the steaks. 

This restaurant, named after James William (Jimmy) Buffett himself, has become a new favorite among travelers and locals alike. Concept chef Carlo Sernaglia came onboard with one vision in mind: to set JWB apart from other Floridian restaurants by offering the finest-quality products around. 

Take for example the spear-caught seafood program for which local diver John Dickinson sets out every morning to catch fish by using sustainable and practical means. Options for an evening meal may include lionfish, wahoo or snapper. You’ll know it’s caught fresh by the way it tastes—served only with minimal ingredients to truly allow the fish to speak for itself. And don’t be surprised if there is not a fresh catch of the day written on the menu. 

“That’s the point—when we have it, we have it,” Sernaglia says. “We’re not going to artificially make it happen. Therefore, we are not going to go out of our way to fly in a spearfish from Hawaii, because no, [here] it’s local, fresh and sustainable.”

If you go, take a peek at the extensive wine and hand-crafted cocktails list, and be sure to ask the waiter about the raw bar for a delicious array of handmade sushi rolls, paradise ceviche, oysters and other delights. 

And if you’re feeling like you want to cut into a beautiful piece of meat, opt for the 22 oz. Prime Bone-in Ribeye, or the Prime Sirloin Oscar topped with jumbo lump crab meat and accompanied with grilled asparagus, hollandaise and Yukon Gold potatoes. Try to leave some room for dessert and dive into the homemade banana cream pie.
