A fast, on-the-go food bowl restaurant is coming to Boca Raton.

Bolay, which lets patrons customize healthy food bowls, is scheduled to open its third location, in the Polo Club Shoppes, on Dec. 1. The original location is in Wellington, and a second store is expected to open in Palm Beach Gardens this fall

Founder Chris Gannon, who is also the son of Outback co-founder Tim Gannon, says he is thrilled to be bringing his gluten-free, nutrient-rich bowls to the area.

“We really pride ourselves in knowing that people’s time these days is very valuable,” Gannon said. “People don’t have the time to sit down and eat at a restaurant and spend 45 minutes to an hour during the day, so here we give you that same quality meal in a much quicker fashion.”

Each customer is able to build a custom bowl by choosing from a variety of proteins and locally sourced sides.

Bases for the bowls include gluten-free cilantro noodles, Peruvian quinoa and marinated kale and currant salad. Customers can also choose to add on vegetables like roasted Brussels sprouts, smoky cauliflower and maple-roasted butternut squash. Protein additions range from ponzu tuna to tofu. An assortment of sauces and sides can also be added to complete the custom bowls.

Bolay will also offer a selection of its gluten-free desserts, including the chocolate mousse and a peanut butter poppy crème, as well as a variety of cold-pressed juices.

“People always find [the juices] very exciting and different. We make them in-house every day, and each juice has about seven to eight pounds of produce in there fresh,” said Gannon.

Bolay recently launched an online ordering portal, so guests can skip the line and be in and out with their meal in a matter of minutes. Catering services are also available at eatbolay.com.

The restaurant will open at 10:30 a.m. and close at 10 p.m. every day of the week.
